The need to eat a gluten-free or celiac-related diet means that you are unable to tolerate the protein that occurs in wheat, barley and rye. This protein is seen in most processed food and is why we need to ask the question when it comes to cheese. Derivatives of wheat or barley protein are present as thickeners in a lot of foods.
